Abstract

Twenty three accessions of mung bean”Vigna radiate (L.)Wilczek”were cultivated in the farm of Faculty of Agriculture,El-Minia University during the summer season of 1994 and 1995. Sample of the accessions were obtained and divided into two parts to evaluate the physical and chemical properties of the seeds before and after sprouting. The physical treats were included, thousand seeds weight, volume and density. The second part of seeds were sprouted under the laboratory conditions. Peroidic rinsing with water at 2hr. intervals was run to control microbial growth.The chemical composition of raw (untreated for sprouting) and sprouted seeds of these accessions was evaluated. The nutritional quality of raw and sprouted seeds of the four highest yield accessions was measured chemically including essential amino acid analysis and macro-micro elements i.e.Na,K,P,Ca,Mg-Fe,Mn andZn.
