Abstract In this study the seeds of cowpea (vigna sinensis) variety Cream 7, grasspea (Lathyrus sativus L) unspecific variety and grains sorghum (sorghum bicolor , L Mench) variety hybrid sorghum 102 (high tannin content) were obtained from forage Research Section, filed crops research institute, Agricultural Research center, Giza, Egypt. The results could be summarized as follows :- 1- effect of germination on chemical composition. 2- effect of germination on sugares. 3-effect of germination on protein constituents. 4- effect of PH on albumins and globulins solubilities in cowpea and grasspea seeds. 5- effect of germination on free amino acids. 6- effect of germination on protein subwnits structure. |
