Abstract

The results of investigation as follows:
The slaughter weight of bouscat rabbit dependant on the age the rabbit of 4 moths age recorded higher weigh than of 3 moths age. The weight of rabbits of 3 months in age ranged between 665-885 grams and the rabbits of 4 months in age ranged between 1490-1860 grams. The edible carcass as percentage of live weight recorded the higher percentage in bouscat rabbits of 4 months 45.6%and 38.9% for the rabbit of 3 months. The carcass of the studied rabbit has divided into three commercial cuts :
Shoulder loin and leg. The leg cut as the percentage of carcass weight comprised the higher percent in both rabbit sizes studied (40.07 and 42.7%) followed by shoulder (33.52 and 38.28%)and loin cut (26.39 and 19.08%)for the rabbit of 3 and 4 months respectively. The carcass of the rabbit of 3 and 4 months yielded 76.86 and 80.52% muscles as percentage of carcass respectively it was noticed an increases in muscle yield when the age was increased the meat/ bone ratio increase with the increases of age this ratio for the rabbit of 3 and 4 months were 3.32 and 4.13 respectively the total waste (inedible by-prouducts) which was consisted from blood pelt viscera and feet recorded (43.09 and 39.9% of live weight )for the rabbit of 3 and 4 months age respectively . among these parts the viscera comprised the major percent (28.43 and 22.72%) the edible by products such as heart lungs head liver and kidneys comprised an important percentages (17.76 and 15.36%)for the rabbit of 3 and 4 months age it could be added these percentage to the carcass percent then it could be concluded that edible weight in both rabbit of 3 and 4 months comprised 56.71 and 60.99%of live weight respectively.
