Abstract
Bacterial capsular polysaccharides include a divers range of bibologically important molecules they constitute the outermost layer of cells mediating direct interaction between the bacterium and its immediate environment and number of biological processes the production of capsular polysaccharides confers many advantages to lactic acid bacteria including resistance to desiccation phagocytosis phage attack and freeze drying.
