Abstract

the aim of this work was directed towards the coagulation time of milk as affected by some factors the study involved two parts. This part of study deals with the investigation of the physical factors influencing the coagulation time by rennet such as season, individuality and milking time.
Results obtained can be summarized as follows.
1- Effect of season on coagulation time of bulk cow and buffalo milk :
Coagulation time of cow and buffalo milk was mora rapid in summer than other seasons. Cow milk gave the longest coagulation time in autumn but it was in winter for the buffalo one. Seasonal variation of coagulation time was clear between autumn, winter , spring and summer of both cow and buffalo milk.
2- Effect of individuality and bulk cow and buffalo milk on coagulation time :
The individual samples of bothe cow and buffalo milk showed a wide range of variation than in bulk one.
The rennet coagulation time of bulk cow milk samples ranged from 55-96 sec., while in individual ones ranged from 55-102 sec. in buffalo milk the coagulation time ranged from 48-79 and 41-83 sec. for bulk and individual samples respectively
3- Effect of phase of milking and milking time on the coagulation time of bulk cow and buffalo milk.
