Abstract
in the present investigation a surgery was conducted to evaluate the potentiality of thermophilic fungal species isolated from cultivated soil and other sources, to utilize phytates for the production of phytases enzymes. For this purpose, several culture studies were carried out on the isolated fungi for selecting the highly active strain with the aim of increasing their extracellular phytase production by optimizing the various process parameters that influence the enzyme synthesis. Isolation and purification of phytase obtained from the more active isolate were also considered. Moreover, the study was extended to investigate the physicochemical properties of the purified phytase.
