Abstract

A twenty slaughtered cattle at Luxor conventional abattoir were swabbed at different sites. Each slaughtered animal were represented by swab samples from lateral thigh, posterior thigh, anterior shoulder and brisket (after slaughtering and before dehiding) as well as from shoulder, thigh, neck and abdomen (after dressing and evisceration). 30 swab samples from knives and saws besides 20 similar samples from and worker’s hands; and 20 samples from water and air were collected. The collected samples were identified and rapidly transferred in ice box as possible as to laboratory for examination.
It was found that the mean value of APC of lateral thigh was 2 × 106 ± 106 cfu/cm2. While it of 2 × 106 ± 106 cfu/cm2 at posterior thigh. In Anterior shoulder, it was of 3 × 105 ± 105 cfu/cm2. At brisket region, it was of 3 × 106 cfu/cm2 ± 106 cfu/cm2. The mean value of MPN of coliforms of each of lateral thigh, posterior thigh, anterior shoulder and brisket were 3 × 102 ± 102, 3 × 102 ± 102, 2 × 102 ± 8 × 10 and 2 × 102 ± 9 × 10 cfu/cm2, respectively. The mean value of MPN of fecal coliforms of lateral thigh, posterior thigh, anterior shoulder and brisket, were 3 × 102 ± 102, 2 × 102 ± 9 × 10, 2 × 102 ± 5 × 10 and 2 × 102 ± 9 × 10 cfu/cm2, respectively. The mean value of MPN of E. coli in lateral thigh, posterior thigh, anterior shoulder and brisket were 9 ± 6, 0.47 ± 0.47 and 0.83 ± 0.57 cfu/cm2, respectively. The mean value of coagulase positive S. aureus count of each lateral thigh, posterior thigh, anterior shoulder, and brisket were 7 × 102 ± 4 × 102, 5 × 10 ± 10, 4 × 10 ± 10 and 103 ± 102 cfu/cm2, respectively.
It was found that the mean value of APC of abdomen of dehided uneviscerated beef carcasses was 4 × 105 ± 105 cfu/cm2. While it was 2 × 106 ± 106 cfu/cm2at abdomen of dehided eviscerated beef carcasses. In shoulder of dehided, eviscerated and split beef carcasses, it was 2 × 106 ± 106 cfu/cm2. At thigh of dehided, eviscerated and split beef carcasses, it was 4 × 104 ± 3 × 104 cfu/cm2. While at neck of dehided, eviscerated and split beef carcasses, it was 3 × 105 ± 2 × 105 cfu/cm2. The mean value of MPN of coliforms were 3 × 10 ± 10, 9 × 10 ± 5 × 10, 2 × 102 ± 102, 2 × 102 ± 8 × 10 and 2 × 102 ± 7 × 10 cfu/cm2 of abdomen of dehided uneviscerated beef carcasses, abdomen of dehided eviscerated beef carcasses, shoulder of dehided, eviscerated and split beef carcasses, thigh of dehided, eviscerated and split beef carcasses and neck of dehided, eviscerated and split beef carcasses, respectively. The mean value of MPN of fecal coliforms of abdomen of dehided eviscerated beef carcasses, shoulder of dehided, eviscerated and split beef carcasses and neck of dehided, eviscerated and split beef carcasses were 9 × 10 ± 10, 102 ± 9 × 10 and 8 × 10 ± 5 × 10 cfu/cm2, respectively. On the other hands; the mean value MPN of fecal coliforms of abdomen of dehided uneviscerated beef carcasses and thigh were each constituting 9 ×10 ± 10 and 7 × 10 ± 3 × 10 cfu/cm2, respectively. The mean values of MPN of E. coli abdomen of dehided uneviscerated beef carcasses, shoulder of dehided, eviscerated and split beef carcasses and thigh of dehided, eviscerated and split beef carcasses were 0.18 ± 0.18, 0.18 ± 0.18 and 4 × 103 ± 2 × 103 cfu/cm2, respectively. On the other hand, the mean value of MPN of E. coli of abdomen of dehided eviscerated beef carcasses and neck of dehided, eviscerated and split beef carcasses was less than 3. The mean value of coagulase positive S. aureus count were 3 × 10 ± 10 , 102 ± 10 , 2 × 10 ± 10 and 3 × 10 ± 2 × 10 cfu/cm2 for each of abdomen of dehided uneviscerated beef carcasses; abdomen of dehided eviscerated beef carcasses; shoulder of dehided, eviscerated and split beef carcasses; and neck of dehided, eviscerated and split beef carcasses, respectively.
