Abstract

I.This study was carried out with the aim of raising up the outcome from the horticulture crops especially those of exporting and economic value. Four crops were selected; two fruits Apricot (armeniace Valagaris lam ) and Fig (Ficus carica ) and two highly marketed and exported vegetables; Strawberry (Fragaris xananassa ) and Green beans ( Phaseolus). The study was carried out for two successive seasons 2007/2008 and 2008/2009; each crop at harvesting times for; Apricot during May of each season; Fig during July; Strawberry during November till April and Green beans during October till June of each year. The crops were collected from El Aguizy International Co. ; placed at Sadat city and Tahrir city. The crops on receiving were subjected to physical, chemical and biological analysis, then the selected fruits went through the steps of processing by the Individual Quick Freezing technique. The variety ( Canino ) was selected for its good quality of colour (75%), Texture (16pound/Cm²) and fruits size ( 25- 45 mm. then the selected fruits were washed in disinfected water and cut into halves, after which the different steps of processing was carried out till packing in 10 kg bags then they were ready for transportation and shipping. Fig: 1-The variety (Sultany) was selected for its good colour and test (TSS 16 º) and also the complete maturity and big size. 2-The physical, chemical and microbiological investigation was carried out on the received fruits where the values of cadmium was 0.008 PPM , Lead was 0.01 PPM , < 10 CFU Mould and yeast were < 10/gm CFU. 3-The fruits were divided into halves and quarters, then sorted and Washed, after which packing in 10 Kg bags and stored at – 18ºC. Strawberry: 1- The variety ( Camarosa ) was harvested from El Aguizy Farms and all the inspections on the fruits were carried out. The chemical analysis for the final product for cadmium were 0.008 PPM, Lead 0.01 PPM and the microbial analysis for coliform , E.coli , Yeast and Mould < 10 CFU
/ g and the total count was 50 CFU / g. 2- The fruits were washed with the disinfectant water for microorganisms and after sorting to reject the unfit fruits. The selected firm, good Colored fruits were taken and the green parts as well as the tip of the fruits were removed. 3- The fruits were under gone the different steps from sorting till packing in 10 kg and 50 kg bags where it was stored at – 18 º C were read transportation and shipping.
