Abstract

Three hundred random samples of chicken cut - up (70 from each thigh and breast and 80 from each neck and wings) were collected from markets, and shops. The samples were subjected to bacteriological examination. 9-1- Total bacterial count : The results of total bacterial count proved that the log mean value of thigh samples was 7.49 ± 7.084/cm2 for skin and 7.24 ± 7.012 for muscles of the same thigh samples and the log mean value of breast skin muscles samples were 7.31 ± 7.013 and 7.15 ± 7.01, respectively while the log mean value of examined neck and wing samples were 7.80 ± 7.039 and 7.43 ± 7.019, respectively. 9-2- Total enterobacteriaceae count : The results showed that the log mean values of enterobacteriaceae count/gm of examined thigh and breast samples skin and muscles. Samples were 3.78 ± 3.012; 2.50 ± 2.021 for thigh and 3.24 ± 3.062 and 2.95 ± 2.041 for breast, respectively while the count for neck and wing samples were 4.68 ± 4.072 and 3.80 ± 3.051, respectively.
9-3- Detection of enterobacteriaceae : The results indicated that citrobacter diversus, C.freundii, edwardisella, enterobacter agglomerance, Escherichia coli, klebsiella.
