Abstract Two hundred random samples of commercial hen eggs collected from Zagazig markets and different groceries were subjected for physical and microbiological examination . The physical examination revealed that 175 eggs showed different types of abnormalities; out of which 86 had dirty shell , 11 had cracked shell , 14 had running air cell , 34 had sided yolk , 18 had stuck yolk and 12 had cloudy white . The microbiological examination revealed that the mean total colony count/shell in examined egg was 1.81 x 107 ± 0.52 x 107 . Coliform organisms could be detected in 47.36 % of clean egg shells and in 72.09 % of dirty egg shells while in magma samples the percentage was 119.5 % . The mean coliform count ( MPN/shell ) were 9.26 x 105 ± 3.96 x 105 , 1.71 x 108 ± 0.54 x 108 and 18.52 x 104 ± 6.59 x 104 in dirty shell , clean shell and egg contents respectively . Pseudomonas aeroginosa could be detected in 9.64 % of clean egg shell 2.33 % of dirty egg shell and 2.5 % of magma samples respectively . The mean total enterococci count/mi. in magma samples was 1.16 x 105 ± 0.281 x 105 . Streptococcus fa.ecalis and Str. faecium were present in 5.5 X and 3 % of examined magma samples while Str. intermediate failed detection in all samples . The relationship between coagulase and Nine test was recorded . Aspergillus spp. Penicillium spp., Fusarium spp., Mucor spp., Rhizopu.s spp. and Cladosporium spp., could be isolated from magma at various percentages ranged from 1 to 3-5 % . The public health importance of isolated organisms as well as suggested measures for improving the egg quality were discussed. |
