Abstract

SAMMARY
Eighty random swabs taken from the surfaces of chicken carcasses
slaughtered at poultry slaughter shops in Benha city, Kalyobia governorate. The collected swabs were represented by 4 groups including control, potassium sorbate, nisin and acetic acid treated surfaces of the
chicken carcasses (20 of each). The collected swabs were subjected to the
microbiological examination to study the effect of such different
treatments on their quality.
The obtained results declared that the aerobic Plate Count (APC)
in the swabs of control and treated surfaces of chicken carcasses was
ranged from 8.5 × 104 to 1.1 × 107 with an average of 2.12 × 106 ±
0.35 ×105 / cm2 for control, 3.2 × 104 to 2.7 × 106 with an average of
5.48 ×105 ± 1.04 × 105 / cm2 for potassium sorbate, 9.7 × 103 to 1.4 ×
106 with an average of 3.69 ×105 ± 0.58 ×105 / cm2 for nisin and 5.6
×103 to 7.5 × 106 with an average of 8.92 ×104 ± 1.73 ×104 / cm2 for
acetic acid treated group.
Enterobacteriaceae count in the swabs of chicken carcasses was
7.46 × 104 ± 1.83 ×104 / cm2 for control, 1.93 ×104 ± 0.39 × 104/ cm2 for
potassium sorbate , 6.61 × 103 ± 1.52 × 103 for nisin and 2.28 × 103±
0.65 × 103 / cm2 for acetic acid treated group. Furthermore, the total
coliform count in the swabs of control and treated surfaces of chicken
carcasses was varied from 5.4 × 103 to 8.6 × 105 with an average of
3.01 × 104 ± 0.75 × 104 / cm2 for control , 2.2 × 103 to 3.1 × 105
with an average of 8.26 × 103 ± 2.11 × 103 / cm2 for potassium
sorbate, 1.8 × 103 to 9.2 × 104 with an average of 2.73 × 103 ± 0.62
× 103 / cm2 for nisin and 6.7 × 102 to 1.5 × 104 with an average of
9.18 × 102 ± 2.34 × 103 / cm2 for acetic acid. Citrobacter diversus,
Citrobacter freundii, Enterobacter aerogenes, Enterobacter
agglomerans, Enterobacter cloacae, Enterobacter hafniae, Klebriella
ozaenae, Klebriella pneumonae, Proteus mirabilis, Proteus rettgeri,
Proteus vulgaris and Serratia liquefaciens were detected from 25% ,
35% , 20% , 5% , 15% , 10% , 30% , 10% , 50% , 40% , 65% and 20%
for control , 25% , 30% , 15% , 0% , 15% , 5% , 20% , 10% , 35%,
25%, 40% and 10% for potassium sorbate, 20%, 20%, 15%, 0%, 10% ,
5% , 15% , 10% , 25% , 15% , 35% and 10% for nisin , 5% , 15% , 5% ,
0%, 5%, 0%, 10%, 0%, 20%, 10%, 25% and 0% for acetic acid, respectively.
