Abstract

Growing interest has developed in microorganisms as
potential sources for various products that are of appreciable
nature in food industries and medical fields. A number of
works, have appeared, where actinomycetes have been used
as a source not only for antibiotics but also for enzymes.
In our study on Amycolatopsis mediteranei, we
detected a powerful extracellular protease and
~-galactosidase produced in the cultures of this strains
during the production of rifamycins B and SV. They have a
great importance in the medical field and in food
industries.Because of the economic importance of this
organism, the enzymes activities as well as the physiology
of formation were studied in the present work. Certain
biochemical properties of these enzymes are also
investigated.
