Abstract

A total of 80 samples collected from raw fish and fish products (20 each of mullet fish, catfish, canned tuna and salted sardine) were purchased from different supermarkets at Zagazig city, El-Sharkia governorate, Egypt and were examined organoleptically and bacteriologically with a determination of BA contents, Beside declaring the relationship between BAs content and other studied parameters (Total Enterobacteriaceae count and pH).
1- Organoleptic examination:
Organoleptic examination of mullet fish revealed that 75% of the samples were fit for human consumption while 15% border line (judged for rapid consumption) and 10% unfit for human consumption. While the organoleptic examination of catfish showed that 70% of the samples were fit for human consumption while 20% border line and 10% decomposed.
Physical examination of canned tuna included outside and inside examination of the cans and its contents. Rust was the observed external defect in 5% of examined canned tuna samples.
Organoleptic characteristics of the content declared that 95% of the examined samples had a sufficient clear oil, specific odor, acceptable taste and semi hard consistency. While the remaining 5% had in sufficient turbid, non specific odor, un acceptable taste and soft consistency. The color of canned tuna samples was light brown, light red and grayish with percentages of 80%, 15% and 5% respectively. Also canned tuna samples had no any foreign tissues other than fish flesh.
