Abstract

Three hundred and sixty fresh table eggs (90 each of farm white, farm brown, baladi and duck eggs) were randomly collected from different markets in Cairo and Giza governorates (Egypt). Every three eggs from each type were represented as one egg composite sample. The collected samples were packaged each in a sterile plastic bag and transferred directly to the laboratory with a minimum of delay for microbiological examination. Eggs were maintained at temperature below 10oC until analyzed. The samples were examined microbiological for the incidence of Salmonella, E.coli, Staphylococcus.aureus and Listeria monocytogenes. The results revealed that 4 (1.67%) of the samples were infected with Salmonella .Four serotypes of bacteria of the genus Salmonella were identified as Salmonella enteritidis, S. Kentuky, S. enterica salamae and S. montovideo . It was also revealed that E.coli were observed in 5 (2.09%) of the samples investigated. The recovered E.coli isolates were O157, O125, O44 and O55. Staphylococcus aureus were detected in all types of egg samples except washing of brown shell eggs with a percentage of (9.17%) in which (6.67%) for egg contents and (11.67%) for shell washing. Listeria monocytogenes failed to be detected from the shell and content of the examined egg samples. This suggests that the table eggs offered for sale in these markets were harboring Salmonella, E.coli and other microorganisms of public health importance.
