Abstract

The present study was carried out to evaluate the nutritional status of a selected sample of infant aging 6 months up to 1 year in Sharkia Governorate and comparing their nutrient intake and growth in both areas, their anthropometric measurements and distribution of the Z-score of weight for age and length for age were assessed in relation to the NCHS reference population growth Tables. And preparation infant food mixtures from available legumes (lupine, chickpea and lentil) and cereals (hull-less barley) and evaluated them biologically and determined PER, NPU, DC, BV. In the overall population, 50% of infants were found to be under weight (Z-score <-SD) in traditional rural areas at age 9-12months, while 26.67% of infants at group 6-8.5 months in urban areas were under weight. Most of sample in normal weight (median ± S.D.) in urban areas, the percentage were 73.33%and 86.67% for group 6-8.5 and 9-12 months respectively, finally there were significant differences between them in weight-for-age Z score. Most of sample had a normal stunting (median ± S.D.) in both areas while the highest percentage were (75%) at age 9-12 months in urban areas. Finally, there was no significant difference between them in length-for-age Z score. There were high significant differences (p≤ 0.01) between socioeconomic class and W/A z-score and there was no significant differences between socioeconomic class and L/A z- score in traditional and urban rural areas. For preparation infant food mixture from legumes (chickpea-lupine-lentil) and hull-less barley with addition skim milk powder, found that mixture No 2 (63.59% cooked barley, 8.31% cooked lupine, 7.98% cooked lentil and 20.12% skim milk) was the best as compared with the control. The results reported that pressure cooking was the best as compared the germination to removal anti nutritional factor.
