Abstract Edible offal such as liver, kidney, spleen and heart are widely consumed. They are rich in mineral and vitamin contents but they can be contaminated more frequently than animal’s carcasses by many types of microorganisms from the moment of animals slaughtering until consumption. A total of 90 random samples of imported frozen offal (30 from each of liver, kidney, and heart) were collected randomly from supermarkets and shops at Zagazig city, El-Sharkia governorate under sanitary conditions, for organoleptic, chemical and bacteriological examination. I-Organoleptic examination: The results revealed that out of 90 samples, 100% were normal in color, odor, consistency and taste. II-Chemical examination: The pH of examined imported frozen samples of liver, heart and kidney ranged from 6.71 to 6.75, 6.50 to 6.60 and 6.41 to 6.62 with mean values of 6.74 ± 0.61, 6.57± 0.64 and 6.46 ± 0.71, respectively. The results were in the range accepted by the Egyptian Standard (ES) (2005) which set the acceptable PH level of edible offal (6 - 6.8). TBA in the examined imported frozen samples of liver, heart and kidneys of cattle ranged from 0.13 to 0.59, 0.01 to 0.13 and 0.17 to 0.19 with mean values of 0.36 ± 0.11, 0.07 ± 0.025 and 0.18 ± 0.017 mg/malonaldehyde/kg. All the examined samples of imported frozen liver, heart and kidneys of cattle were accepted according to the safe permissible limit recommended by Egyptian Standard (ES) for TBA in edible offal (should not exceed 0.9 mg malonaldehyde/kg). |
