Abstract

The study conducted to estimate the residual levels of some heavy metals and trace elements (Lead, Cadmium, Arsenic, Zinc and Copper) in the edible (Liver, kidneys and heart muscle) of cattle and sheep slaughtered at Zagazig abattoir. One hundred and fifty samples of cattle edible offal’s, 50 samples each of liver, kidneys and heart were collected. Sixty samples of sheep edible offal’s, 20 samples each of liver, kidneys and heart were collected. Comparing the results with the Egyptian organization for standardization (EOS) 2007 shown that: 1- In cattle offal’s: the lead (Pb) exceed the Egyptian permissible limits 2007, in liver, kidney and heart samples by 76%, 80% and 48% respectively, cadmium in liver, kidneys and heart exceed the permissible limits in 58%, 66% and 24% respectively, Arsenic exceed the permissible limits in liver, kidney and heart by 100% in all samples. While the trace elements Zinc in liver, kidneys and heart exceed the permissible limits in 18%, 2% and 4% respectively. 2- In (sheep offal’s) the Lead exceed the Egyptian permissible limits in liver , kidneys and heart by 25%, 30% and 30% respectively, cadmium in liver and heart exceed the permissible limits in 15% and 25% respectively, while in kidneys no sample exceed the permissible limits.
