Abstract

Abstract
The term productivity has gained popularity in the business world. However, productivity management is a big challenge to organizations especially when the product is in the form of a service. Hospitality industry being a part of service industry faces a similar problem. Then this study aims at measure the food and beverage productivity. The major aim of this study is to find the productivity in the food and beverage department in Mercure chain hotels in Egypt using the linear programming technique, stochastic frontier analysis (SFA) by using panel data for ten years results from year - from case study hotels. This study uses a parametric approach to measure the productivity especially in the last years, finally this study developed a valid and reliable scale to measure EP and it will be a key contribution to the scientific research field, and it was done perfectly.
also the research examined the correlations and significance between seven indepenant factors ( External factors, work environment, employees, management, customers, marketing, ,information technology,)and one dependent factor (employees productivity) henceforward, Design/methodology/approach – The first phase empirical data was collected via a structured questionnaire from line staff and managers of Mercure hotels in Egypt -The second phase data was collected from the annual profit and loss statement of the above-mentioned hotels. Study Findings highlighted in this research accepted factors which were (x =external factors and x =management related factors and their hypothesis were then accepted, however the others factors were refuted in this empirical data which might let the door open to further research to
