Abstract

A-Edible by-product samples:
A total of 180 random samples of liver, kidney, heart, tongue and masseter muscle (n= 18 for each byproduct from each animal species) from adult cattle and camel carcasses marketed at Sharkia Province butchers houses.
B-Non-edible by-product samples:
A total of 180 random samples (n=10 for each byproduct from each animal species) of hair, hide and bone from adult cattle and camel carcasses from different butchers houses at Zagazig, Abo-Hammad and Belbies cities.
Sampled tissues for analysis were stored in plastic falcon tubes and placed in ice box at -20˚C and directly transferred to Meat hygiene laboratory, Faculty of veterinary medicine, Zagazig university. The samples were extracted for heavy metals measurement.
Heavy metals measured included lead, cadmium, arsenic and mercury.
A-Edible by-product results:
(1) Arsenic:
The results recorded in table 1 revealed that the mean ± SE values of arsenic (ppm) in the examined liver, kidney, heart, masseter muscle and tongue of cattle were 4.215±0.401,.
