Abstract

The present study was carried out on 150 random samples of meat products (50 each of minced meat, sausage and beef burger) collected from different butcher shops and markets at Sharkia Governorate, Egypt, at different levels of sanitations and the collected samples were examined for assessment of the hazards of such products according to their bacteriological profile and heavy metal residues.
The recorded results indicated that a mean values of APC was 5.44 ±0.11 log10 CFU/g, 4.07±0.11 log10 CFU/g and 5.41±0.08 log10 CFU/g for minced meat, sausage and beef burger samples respectively; also, 20%, 4% and 16% of the examined products samples respectively exceeded the permissible limits.
Total Coliforms were 4.15±0.10 log10 CFU/g , 2.12±0.12 log10 CFU/g and 2.99±0.12 log10 CFU/g for minced meat, sausage and beef burger samples respectively, and prevalence rates were 80%, 70% and 76% for the same mentioned products respectively ; moreover, 50%, 10% and 20% of the examined samples exceeded the permissible limits.
The prevalence rates of S. aureus were 18% (9 from 50), 14% (7 from 50) and 24% (12 from 50) in the examined minced meat, sausage and beef burger samples respectively, with a total percentage 18.66% (28 from 150) and the mean values of S. aureus count was 3.45±0.20 log10 CFU/g, 2.31±0.19 log10 CFU/g and 3.47±0.12 log10 CFU/g respectively.
