Abstract

The aim of the present study was irradiation sesame oil for pantry storage using Gamma and Laser radiations then quality evaluation of sesame oil to prolong shelf life. Sesame Seed sample was obtained from the Agricultural Research Center, Field Crops Research Institute (FCRI) - Department of Oil Crops Research .Then sesame seed was extracted on cold press from Extraction Unit - National Research Institute to obtain sesame oil. Seven samples of sesame oil were irradiated three of them by Gamma Rays with dosses 2, 4and 8 (kGy), other three by Laser with different time 0.5, 1.0 and 1.5hr) and one sample without any treatment (control){. The total samples of sesame oil after irradiated were analyzed the physical and chemical properties. The obtained results were showed as following: Acid, Peroxide, Saponification and Rancimate values were increased by increasing storage time from 3 to 9 months, for irradiation doses from 0 to 8 kGy. While, that values were decreased by increasing storage time from 3 to 9 months. But, Iodine value was decreased by increasing storage time from 3 to 9 months, for irradiation doses from 0 to 8 kGy. While, they were found that Iodine and Reflective Index values were decreased by increasing storage time from 3 to 9 months. Also, the obtained results were showed as following: Acid, Peroxide, and Saponification values were increased by increasing storage time from 3 to 9 months, for irradiation of exposure time from 0 to 1.5 hr. While, that values were decreased by increasing storage time from 3 to 9 months. But, Iodine and Rancimate values were decreased by increasing storage time from 3 to 6 to 9 months, for irradiation of exposure time from 0 to 1.5 hr. While, It was found that iodine and Rancimate values were decreased by increasing exposure time of Laser from 0 to 1.5 hr.. . Reflective Index was light decreased by increasing storage time from 3 to 6 to 9 months. Which, not effect of Reflective Index of oil sesame oil quality, at increasing irradiation doses of from control to 1.5 hr using Laser or 8 kGy using Gamma radiation. It was noticed that Fatty acid not changed by irradiated sesame oil during pantry of storage time by Laser or Gamma radiation. For Color properties measurements as Hue degree, Saturation value, and Brightness (HSB), the obtained results from the effect of gamma radiation and exposure time of Laser on color properties were showed that by increasing Gamma radiation doses and exposure time of Laser, Hue Degree was increased, that mean the color of sesame oil may be improved to be less quality. While, Hue Degree was decreased by increasing storage period. While, by increasing Gamma radiation doses and exposure time of Laser, the value of saturation was decreasing, that means that the color of sesame oil may be improved to be high quality. Meanwhile, the value of saturation was decreased by increasing storage period and by increasing Gamma radiation doses, exposure time of Laser and by increasing storage period the value of brightness was decreasing.
