Abstract

In Egyptian folk- medicine, the seeds of Egyptian clover were used as antidiabetic agent and also radishes have been used as medicinal foods for a variety of ailments. Egyptian radish sprouts (ERS) and Egyptian clover sprouts (ECS) were used to study the effect of seed sprouting on proximate analysis, mineral content, vitamins, amino acids, total phenols, flavonoids and phytochemical compounds fractionation in sprouts vs. seeds and the obtained results were recorded. ERS and ECS were used to study their hypoglycemic properties against diabetes-induced rats. The rats were distributed into 6 groups,1-normal control with standard diet, 2-diabetic control with standard diet, 3- normal with ERS semi-modified diet,4-diabetic with ERS semi-modified diet, 5- normal control with ECS semi-modified diet, 6-diabetic with ECS semi-modified diet each group of 6 rats. Diabetes was induced by streptozotocin (STZ) injection (60 mg/kg body weight). STZ {u2013}induced diabetic rats showed significant increase in the levels of blood glucose, cholesterol, LDL-c, VLDL-c and urea as well as AST, ALT and ALP activities, WBC total counts and differential leucocyte counts as well as daily food and water intakes also relative kidneys ,liver, brains and testes weights .On the other hand, body weight gain (BWG), feed efficiency ratio (FER), water efficiency ratio (WER),SOD and LDH activities as well as GSH, creatinine, uric acid and blood PLT levels were significantly decreased compared to normal control rats
