Abstract The current investigation aimed to study (1) acceleration of fermentation carried out by a combination of mixed cultures of yoghurt and therapeutic bacteria for preparation of therapeutic fermented milk, stimulation of Bifidobacterium spp or L. acidophilus by addition ascorbic acid, whey protein, certain carbohydrates and some minerals to milk for production of bifidus, acidophilus and ABghurt milks. (2) survival of probiotic bacteria at high bile salt concentration and low pH. (3) antagonistic activity of probiotic bacteria towards the growth of different pathogenic bacteria. (4) effect of probiotic bacteria on intestinal microflora. The obtained results could be summarized as follows: 1 using the therapeutic bacteria together with lactic acid bacteria. Bifidobacterium spp + yoghurt starter or L. acidophilus + yoghurt starter or Bifidobacterium spp + L. acidophilus + yoghurt starter, reduced the incubation time to 4 hrs, high viability for therapeutic bacteria. Supplementation of therapeutic fermented milks with minerals with or without glucose, also whey protein reduced the incubation time. Probiotic bacteria showed the higher tolerance to low pH and high bile salt concentration. Antagonistic action of therapeutic bacteria exhibited full destruction for the pathogenic bacteria during storage at 68<U+F0B0>C. The administration therapeutic fermented milk with lactulose reduced coliform group and pH of rabbit faeces and increased the counts of therapeutic bacteria in rabbit faeces. |
