Abstract This study based upon the bacteriological examination of the excised skin samples obtained from a total of forty broiler carcasses purchased from various poultry shops at Mansoura city - before and after applying 6 different treatments for decontaminating such carcasses; these treatments consisted of : (1) Showering the entire broiler carcass – immediately after dressing – with drinkable water for one minute. (2) The same first treatment followed by wiping with clean cotton cloth. (3) The same first treatment followed by wiping with sterilized cloth. (4) Dipping the carcass – promptly after dressing – in 2% aqueous solution of lactic acid for 30 seconds. (5) Dipping the carcass in 2% aqueous solution of acetic acid for 30 seconds. (6) Dipping the carcass in 10% aqueous solution of trisodium phosphate for 30 seconds. The obtained results showed that the 4th treatment was the most effective method for broiler carcass decontamination. of the applied treatments adversely affect the sensory characteristics of the treated carcasses. |
