Abstract Fresh juice blends are a popular food consumed daily by different age stages of rich and poor people for their low prices and pleasant flavor. In spite of the cheap price of these juices; they have high nutritive value for their high content of β-carotene, minerals as calcium, potassium, magnesium and iron. Different fruits and vegetables can be purchased around the year with low price. Therefore in Egyptian diet such juices can be considered as one of the main sources of vitamins and minerals beside the other sources. Mixed juices and their derivatives such as, nectars are considered as an important untraditional product. Now it is largely distributed in the world wide markets due to pleasant mouthful feel, taste, color and aroma perception, as technological and sensorial advantages. Moreover it would lead to health promotion as therapeutically beverage and also to gain excessive economical benefits based on a lot of consumption. So this investigation was designed to find out the most popular fruits and vegetables rich in provitamin A (β-carotene) and minerals and determine the chemical components of different fruits and vegetables. Then, formulate twenty juice blends from this fruits and vegetables (mango, apricot, carrot, pumpkin), make comparison between different juices by sensory evaluation to choice the best six blends and determine the chemical components of this juice blends and effect of storage period on β-carotene content. It could be concluded that drinking 200 ml from blend (50% apricot + 50% carrot) provide high content of β-carotene which represent (2000 μg) and covers approximately, 30% of daily requirements of potassium (650 mg) while, drinking 200 ml from blend (80% mango + 20% carrot) provide high content of β-carotene which represent (1350 μg) and covers approximately, 50% of daily requirements of potassium (900 mg). Moreover these blends could be purchased with low price. |
