Abstract This study concerns with salted fish product in Egypt, Which named ’ Fessekh ’. Since the demand for Fessekh is increasing every year in Egyption market and at certain occasions and feasts. Gray mullet or mullet ( Mugil cephalus ) was taken as the natural raw material for the production of fermented salted fish (fessekh). This study was achieved at the laboratory of food Industries Department, faculty of Agriculture, Mansoura University. |
