Abstract
This investigation was carried out to study three major parts. The first part was to study the drying characteristics of potatoes in two shapes (cubes and strips), under three levels of air temperatures and velocity, and producing a monogram of drying potatoes . The second part was to study the effect of drying conditions on some physical properties of the final product .The third part was to examine the drying characteristics of sweet potatoes under different conditions.
To study these parts, many equipments were employed for the experimental investigation, such as :
1- Laboratory dryer
This dryer considered mainly of a fan, heater box, and drying bin. A centrifugal fan was driven by a 1/4 HP. And 2800 r.p.m. electric motor. The heating set up considered of six heaters, 1 Kw each. A thermostat was placed at the bin inlet to control the drying air temperature. Two types of drying bins was made in this investigation . The first type of bins was made of galvanized sheet metal (35 cm. inside diameter, 80 cm height and 2 mm. thickness). It was at the top end to a balance with an accuracy of + 1 gm. It was to study the drying characteristics of potato and sweet potatoes . The second type considered of three wooden trays which were mounted inside the bin on top of each other.
