Abstract The present i n v e s t i g a t i o n dealed with u t i l i z a t i o n of cheap and available i n d u s t r i a l food by-product and waste in pro teases production by Aspergillus oryzae NRRL-2217 fungus which was able to produce appreciable amount of these enzymes . Therefore , corn steep l i q u o r , a by-product of corn s t a r c h industry containing 7.5% t o t a l soluble s o l i d s as w e l l as r i c e steep l i q u o r ( l i g h t phase ), a waste of r i c e starch industry i n Egypt containing 5% t o t a l soluble s o l i d s were t e s t e d and used as media f o r proteases production and possibly biomass production too. Results can be summarized i n the following points: A- Two hundreds f i f t y ml. of r i c e steep l i q u o r d i l u t e d to one l i t e r o r 200 ml. of corn ;teep l i q u o r d i l u t e d to one l i t e r witn tap water gave t;he dghest amount of proteolytic enzymes and dry biomass ~y Aspergillus oryzae I2RL- 2217 . 14- Aspergillus oryzae NKHL-2217 was grown on four various media,namely; r i c e steep 1iquo.- , corn steep l i q u o r -, modified m a l t sprout extract , modified ~zapek’s-DOX media. . The r i c e steep liquor and corn steep l i q u o r proved to be the best media f o r the production of proteases by Aspergillus oryzae NKRL-2217 a f t e r seven days of fermentation. C- The s t u d i e s of other nutritional f a c t o r s for getting the optimal composition of media showed |
