Abstract The present work is planned to deal with: 1) sereening bacteria and fungi for the production of milk-clotting enzymes. 2) studying the optimum culture conditions for the enzyme production by thE selected strains. 3) studying some properties of the partially purified milk-clotting enzymes produced by the mucor species. 4) evaluating the use of the produced milk clotting enzymes in making soft cheese results of experiments performed are obtained and discussed in detail . |
