Abstract

The present work deals with the study of some environmental factors affecting milk yield and its composition in buffaloes and cows of upper egypt. Ten jersey cows and ten egyptian buffaloes are studied. It is found that the daily milk yield of buffalocs and cows reaches a maximum on the 11 th. And 3rD. Week of lactation respectively. Total solids, solid-non-fat content and fat content of buffaloes milk has the maximum value at the end of lactation period, the 37th. Week and end of lactation respectively. The corresponding values for cow’s milk are at the 1 st., 1 st. And 33rd. Weeks respectively. Total casein whey, non-protein nitrogen, lactose, ash and chloride content of milk are assessed. Effect of age on the production of milk and its fat content is more evident in buffaloes than cows. Eight yeArs old buffaloes’ milk is the highest in total solids. The average protein content is nearly the same in different ages of buffaloes and cows. There is a positive correlation and regression between fat content and its protein, solid-non-fat and solids contents, between total protein and total solids and between casein nitrogen and total nitrogen and whey nitrogen contents.
