Abstract

Food canning industry in Egypt produce a large amounts of wastes, which may cause environmental pollution In this study, the waste percentages of five Canned products were estimated through time of three production seasons, 87-88, 88-89, and 89-90 in Kaha and Edfina food preservetion companies- Calculated waste percentages were 6.5, 9.5, 14.5, 14.2 and 27 for tomato and guava, apricot, peach and orange respect ively.
Chemical analysis for five cannery waste products revealed that the moisture content of guava seeds was higher (6.46%) than that of tomato seeds. While, protein, crude lipids, carbohydrates and total ash contents in tomato were higher than that of guava seeds. Moreover guava seeds showed high levels of crude fibers (71.07%) and high levels of
reducing sugars (4.43%).

The values of crude lipids, crude fiber and Total ash were almost equal in kernels of both peach and apricot. However the moisture content of apricot kernels was 7.25%, higher than that of peach kernels (4.05%).
