Abstract Aflatoxins and ochratoxin A are the most dangerous mycotoxins founded in animal feed and human food especially which contain cereals and nuts. Peanut and corn are the most plants that attacked with fungi whiGh produce mycotoxins (aflatoxin and ochratoxin A). Two hundred and sixty four samples, twenty-four samples for each commodity of (raw peanut without shell, raw peanut in shell, roasted peanut without salt, roasted and salted peanut, peanut butter, raw corn, corn oil, pop corn, raw maize, maize flour and starch ) were monitored to determine the four types of aflatoxins (B 1, B2, 01 and 02) and ochratoxin A The most contaminates consumed are raw maize and maize flour followed with roasted peanut without salt, raw peanut without shell & roasted and salted peanut. When raw maize and maize flour are contaminated with high levels of aflatoxins and ochratoxin A they are not consumed without processing and during processing the amounts of toxins are decreasing. All starch samples were free from any traces of aflatoxin and ochratoxin A. For determining the amounts of intake of aflatoxins and ochratoxin A during daily food consumption . The EDT and the percentages rate values were calculated in peanut for aflatoxin B 1 and ochratoxin A. For aflatoxin Bl the values were 0.2 15 (ng/kg body weight/day) and 143.2% respectively, while for ochratoxin A, the values were zero. While EDT ofaflatoxins B 1, B2, 01 and 02 of maize , corn and their products was 252 (ng/kg body weight/day) and exposure percentage 168135%. Also for ochratoxin A, means of maize , corn and their products was 12.63 (j.tg/kg) and the exposure percentage was 2302%. |
